Anyone that has ever been to Nando's will know how ridiculously good their Spicy Rice is and at only 3.5 syns you can't go wrong if you're going there for a meal.

I was craving some of their Spicy Rice the other night and since I don't live close to a Nando's I decided to try make my own syn free version and I was not disappointed! Recipe and method are below!

Ingredients: (Serves 2)

150g Rice of your choice
500 - 600ml of Water
2 Chicken stock cubes
1/2 an onion - finely chopped
1/2 finely chopped red pepper
A handful of frozen peas
1 green chilli or chilli of your choice deseeded and finely chopped
Chilli power - depending how spicy you like it
1 tsp Cumin
1 tsp Paprika
1/2 tsp Turmeric
Frylight

Method:

  1. On a medium heat spray a pan with some frylight and dry fry the rice for 3-4 minutes, stirring frequently.
  2. Once the rice starts to brown slightly, Add some water, (just the bare minimum to cover the rice) chilli power, crush chicken stock cube and turmeric.
  3. Bring to the boil and then simmer gently until the rice is fully cooked and all the water has been absorbed. Stir often to avoid it sticking to the pan!
  4. In a separate pan sprayed with fry light, add the onion, red pepper, frozen peas, green chilli, crushed chicken stock cube, cumin and paprika.
  5. Once everything is cooked add to the rice and stir thoroughly.

Method

Note: You need a cocktail shaker and espresso maker/french press for this one but its worth it!
Pour vodka, vanilla essence, espresso, cream and milk into the shaker and shake very well. (This gives it the lovely foamy head!). Garnish with 3 whole coffee beans.

Well there you are, five spins on the classics. I'd love to hear how you get on making these! Let me know in the comments, or if you have other suggestions!

Turkey Burgers

I've done it. I've finally done it. I've found a way to enjoy turkey mince. It is one of the leanest meats out there and quite inexpensive, so this is great progress for the slimming world journey. You can get 350g of turkey mince in Lidl or Aldi for about £2.50 / €3. This makes 4 burgers, so its very good value.

Ingredients

  • 350g Ground Turkey Mince
  • 1 egg
  • 1 small onion (optional)
  • 1 tbsp Garlic Salt
  • Pepper
  • 1 tsp Chilli Flakes
  • 1 tsp Cayenne Pepper or Cajun Powder
  • Lettuce and Tomato to garnish

Method

  1. Whisk egg in a bowl
  2. Add the salt, pepper, herbs and spices
  3. Add in the chopped onion (if using) and turkey to the egg mixture and mix well. (I use a potato masher to get some juices from the onion, and to make sure everything is well combined)
  4. Using your hands, scoop up a quarter of the mixture and form a ball shape (Note, its a bit gooey at this stage - wear gloves if you need to)
  5. Pop the rounded mixture onto a heated frying pan and flatten it using a spatula.
  6. Repeat for the remaining mixture.
  7. Allow about 8 minutes to cook each side or until fully cooked throughout

TIP

These are nice without bread, but why not add an asda wholemeal sandwich bap (42g) as healthy B! You can also make cloud bread if you want to save syns.

Batch Cooking / Meal Prep Tips for Beginners

"Preparation is the key to success"

It is a phrase that I'm sure you have heard before, and for good reason. These days, everyone is just so busy! Between work, bringing up children, maintaining a social life -- there is little time to waste. So imagine the peace of mind that will come with batch cooking slimming world meals ahead of time. It will minimise the likelihood of any blips in your eating plan, leaving those precious syns for glorious treats. I Hope this post is useful to anyone who wants to start batch cooking slimming world meals, but wouldn't know where to start.

daria-nepriakhina-235583.jpg

Step 1: Planning your meals

  • Decide in advance on your meal plan for the week so as not to over-purchase. (You can use my weekly planner if it helps) Next, go out and buy the ingredients. (Consider going to a butcher for your meat, fish and poultry as it is often cheaper to buy in bulk.)
  • Following slimming world, I will typically aim to have 1 Free Protein food, 1 Free Carbohydrate food and 1/3 Speed Veg in a prepared meal. So this would look something like:
    • Free Protein: Chicken, Turkey,  Quorn Pieces, Lean Beef, Salmon, Cod, Tuna, Eggs, Beans
    • Free Carbs: Sweet Potato, White Potato, Pasta, Couscous, Noodles, Quinoa
    • Speed Veggies: Broccoli, Asparagus, peppers, shallots, Green Beans, Brussel Sprouts, Mangetout, Swede. (I will often also make a simple speedy veg sauce of chopped tomatoes, garlic, herbs and a combination of speed veg.)

Step 2: Cooking

  • Set aside time to cook up a storm. While it is possible to cook a whole weeks meals in advance, I have not yet got to that point of organisation :). When I am on top form with meal prep, I will batch cook on Sunday and Wednesday nights. It takes about two hours to cook two meals for 2 people for Monday - Wed or Thurs - Sunday.

  • The oven is really going to be the most efficient way to cook in large quantities (and won't make as much mess as a multitude of pots and pans will :). To make use of the most space, I would recommend investing in a couple of XL roasting trays. You can get one like this on Amazon
  • Keep it simple. I will typically spray my baking tray with low fat cooking spray, add loads of chopped garlic and herbs, lay out the meat / potatoes or veg before spraying once more and adding extra herbs, spices or seasoning. (I am a huge fan of smoked paprika & cajun seasoning).
  • If you have more time on your hands, slow cooked stews, soups and casseroles are all perfect for batch cooking and really retain flavour and juiciness. Simply double or quadruple the recipe quantities you would usually make when batch cooking.
  • Muffin trays are very handy for making the right portion sizes, which can then be transferred to your containers.

Step 3: Storing food

  • Allow food to come to room temperature (but don't leave longer than 2 hours) before arranging it into containers. I get the rectangular containers from Mr.Price, they are €2 for a pack of 5. You can get better deals again on amazon for the same containers, or get snazzy with the high end Tupperware with compartments if you like.
  • Leave a shelf of your fridge free to stack up your meals for optimum use of space. If you are making many different meals, consider labelling with stickers for easy selection.

Step 4. Re-heating

  • Defrost your meals in the refrigerator overnight, or first thing in the morning if you plan to eat that evening.
  • When reheating any meal be it in the microwave, hob or oven, ensure it is piping hot throughout before eating. This is especially important for cooked meat.
  • Add fresh herbs or sauces after heating up your meals, rather than before. For example, if you have batch cooked curry, add fresh coriander. For a chicken dish, add soy sauce after heating.
